Limoux, famous for its Carnival which runs from late January through to March, is also well known for its sparkling wine "Blanquette de Limoux". Limoux is the origin of the very first sparkling wine in the world. Originally made by the Monks in Saint Hilaire around 1531 you can buy the version "ancestrale" which is very sweet or the "brut".
